Finding that "middle" point to hold while you're setting is definitely a PIA. If it says 5 (-), that means it's activating when you are not even pushing the trigger, and you'll have to try again. For the left trigger it should say "axis 5 (+)" (I think).
So what you need to do is, hold the trigger at about the mid-point, start the assignment process, then push it in the rest of the way. The problem with the triggers is that they are analog devices, and so recognition for them is a little weird depending on the game- I personally have actually seen this happen on other games. What I will say is that sometimes you have to input the assignment multiple times for it to take, for example the directional buttons will sometimes say "button 2" no matter what I push, but after multiple attempts it finally says like "button 13" or something signifying it is actually, up on the D-pad.
